Le Gaïac Restaurant

Located on fashionable St. Barts, Hôtel Le Toiny’s Restaurant Le Gaïac has long been regarded as one of the finest restaurants in the Caribbean. In 2009 this distinction expanded when Condé Nast Traveler’s Gold List ranked Hôtel Le Toiny third in the Americas for food with a rating of 96.3.

Under the leadership of Stéphane Mazieres, age 33, since 2006, the demure French chef presents a refined and sophisticated menu that features an innovative blend of French and Creole influences. The result is a menu that offers such flavorful dishes as mango crab salad with guacamole sorbet and lime foam and grilled filet of yellow tail snapper flavored with licorice green peas kromesky fritters and Jerusalem artichoke fine mousse.

Born in the French Alps, Stéphane’s love of the islands and particularly the French influenced culture of St. Barts led him back to Hôtel Le Toiny twice. First from 2001 – 2003 when he was chef de partie and later sous chef under Executive Chef Maxime Dechamps. He then returned to France where he was sous chef at the three-star Hôtel l’Etourle in Meribel. After a stint there, he went to Michelin-starred Restaurant Leï Mouscardins in St. Tropez and worked under Chef Laurent Tarridec as chef de partie and later sous chef. But in 2006, the island of St. Barts and Hôtel Le Toiny called him back to be at the helm of Restaurant Le Gaïac, a Relais & Chateaux property.

An avid scuba diver and outdoor fitness enthusiast, Mazières loves the lifestyle of the islands and is passionate about embracing the island’s natural flavors and marrying them with a refined French style which features beautiful plate presentations. Having received a Baccalauréat Technologique Hôtelier, Mazières also holds a Brevat de Technician Supérieur Hôtelier, a Brevat d’Etudes Professionnelles de Cuisine and a Certificate d’Aptitude Professionnelle Cuisine.

Prior to his first experience at Hotel Le Toiny in 2001, Mazieres worked at the four-star Hotel Hostellerie Le Baou in Ramatuelle, France, the four-star Hôtel Fitz Roy in the French Alps, and the four-star Le Chateau de la Tour du Puits in Savoie, France.
